Ashley and Julia

Ashley

 

Ashley has over 14 years experience in hospitality working alongside well-established chefs. Originally from Chichester, he started his fine dining career in The Kennels – Goodwood Estate, a private members club. After The Kennels he went to learn more about Gastro Pubs at The Hardwick led by Steven Terry in South Wales, where he met Julia.

 

Highlights of his career include working at 2 Michelin starred The Latymer led by Micheal Wignal, and more recently being the Head Chef for 5 years at Michelin starred Sorrel Restaurant in Dorking, led by Steven Drake.

 

Ashley decided to take a step back from fine dining after falling in love with the charm of The White Lion. Here he hopes to provide a more relaxed offering based around good local produce.

 

Julia

 

Julia started her culinary journey at Ashburton Cookery School in Devon, and has over 10 years experience in hospitality. Julia is originally from South Wales, and met Ashley whilst working at The Hardwick under Steven Terry.

 

Highlights of her career include being Head Pastry Chef at Michelin starred Ockenden Manor in Cuckfield, led by Steven Crane. She then went onto spend 4 years as Head Pastry Chef of Michelin starred Restaurant Interlude in Horsham, led by Jean Delport.

Ashley took Julia to see The White Lion where she also fell in love with the historical charm of the Pub. They both decided to try and reopen what was once a much-loved center of the community.
